Cheese Selection

1. Brie: soft-ripened cow's-milk cheese named for the district in northeastern France in which it is made. (France)

2. Gorgonzola: it's one of the world's oldest blue-veined cheeses. Unskimmed cow's milk is used while preparing the cheese and takes three to four months to attain full ripeness. (Italy)

3. Comté: cheese made from unpasteurized cow's milk in the Franche-Comté traditional province of eastern France bordering Switzerland and sharing much of its cuisine. (France)

4. Housemade mixture of cheddar cheese and cream cheese marinated with citrusy yuzu and coated with pistachio
